Sometimes I like my idlis packed with a little extra. Crunchiness. Flavour. Zest. And my Kanchipuram idli batter is just the thing. This batter has yogurt, cashew nuts, lentils, ginger, cumin, peppercorn and mild spices for all those mornings when regular idlis just won’t cut it. These idlis are best accompanied by coconut or tomato chutney (no sambhar allowed).

I make a fresh batch of this batter every day without any preservatives. You’ll need to refrigerate at all times and use it within three days.
